CoolVines

This is a special project custom made for Jose Pastor. The wines comprised of mostly of Trepat, a local varietal, and some Garnacha. All vines are farmed organically in the Penedez region. There is no dosage and the wine stays sur latte for 16 months.

While the appellation "Cava" does not apply to any regional boundaries, 95% of the wine is crafted in the Penedes region of Catalunya. Most of the fruit is grown on the plateau surrounding the city of Sant Sadurni d'Anoia, but many growers have set their sites northwards.
