The grapes are destemmed and placed in stainless steel tanks with large bases in order to promote color extraction and fixation. After 15-20 days of fermentation and maceration, with frequent manual punch downs of the cap, the wine is transferred to French oak barrels for aging. In French oak barrels of varying size (225 L and 500 L) for 24 months, and bottle aged for an additional 12 months.
20 years ago, Walter Scarbolo began tending to his fine vineyards in Lauzacco (Grave del Friuli) with a contagious energy and enthusiasm. With the help of his father Gino and some of the best wine consultants in Friuli, he is always trying to improve the quality of his wines. The results of all his hard work are impressive: extremely well-crafted wines, with a great distinctive personality.
This entire plain is formed by terrain of alluvial origin. It is coarse in the northernmost segment of the DOC zone and becomes ever finer as the rivers continue along their course virtually to the coast.
In addition to having served as the source of the Grave terrain, the mountains protect the valley from icy winds blowing down from the heights to the north. This aspect, along with the mitigating influence of the Adriatic Sea, has created a climate that is particularly adapted to the cultivation of vines.
