Wonderfully balanced, the Gustav Gruner really surprised most of the tasting staff with both it's richness and minerality. There is a noticeable salinity which combined with the lively fruit and acidity makes for an excellent food friendly wine. Sushi and seafood would be an ideal food pairing, but as we are always thinking about vegetarian/vegan cuisines, this could be a home run.

Minimalist intervention is the credo at Gustav, focus on the highest attainable quality is the philosophy in the cellar just as it is in the vineyard. This approach allows the winemaking team to accomplish their goals of creating wines uniquely Austrian, focusing on regional expression, terrior, and beautiful mineral characteristics of their soils.

One of the oldest wine producing regions in the world, Austria has been cultivating grapes and creating wine since the fourth century BC. After a brief stint in the Roman Empire, the vineyards were painstakingly cultivated by monks throughout the Middle Ages, similar to those of France and Germany. Of all the wine regions in Austria, the Niederosterreich (Lower Austria) is both the largest and most important. Travel down the Danube River and you'll come to the district of Wachau, the tiniest and best. Terraced vineyards climb up the banks of the river, with granite and slate soils contributing to the fantastic minerality. The cool climates combined with the soils produce white wines of clarity, elegance, structure and acidity making them wonderful food friendly wines.
