At Château Lalande Borie, all the grapes are harvested manually. Sorting is carried out directly in the vines on mobile tables to avoid contact between unhealthy and healthy grapes during transport to the vat room. Alcoholic fermentation is managed at relatively low temperatures (between 26 and 28°) to optimise the fruity aromas of the wine. Pumping-over is gentle to avoid extracting too many tannins and obtain a pleasant fattiness. Malolactic fermentation of the free run wine and the press-wine (pneumatic pressing) takes place in vats for optimal control.
In 1970, Jean-Eugene Borie purchased 45 acres of fine vineyard land from the St. Julian 3rd Growth Chateau Lagrange. Lagrange had fallen on very hard times, and the property was in terrible shape, needing to be fully replanted before it could be used to add to the production of Borie’s 2nd Growth property, Chateau Ducru-Boucaillou. Unfortunately for even the best producers, such as Borie and Ducru-Boucaillou, the 1970s, with their oil crises and rampant inflation, was hardly a good time to be adding production to Bordeaux estates. Thus the decision to create a new estate from this land, once some of the best Lagrange owned.

Accounting for some 800 million bottles produced each year, Bordeaux has built its reputation on quality, with some of the world's most sought-after wines being crafted along the river banks. Bordeaux also creates a large amount of table wine, mostly sourced from the lesser of Bordeaux's 57 appellations. Bordeaux boasts over 10,000 winemakers. Known mostly for the red blends, Bordeaux also enjoys notoriety for its excellent sweet white wines, as well as several high-quality dry whites created mostly in the central regions between the two rivers.
