This cuvee is 100% Chenin Blanc which is hand harvested and fermented in stainless steel to preserve the acidity, fruit, and finesse. The brightness and freshness coupled with a rocky minerality and a slight honey make you desire more than one glass.
Treatments in the vineyards at Chateau Soucherie are kept to an absolute minimum as the objective is to produce a wine in as natural a manner as possible. All grapes are harvested manually. The grapes are destemmed and crushed by a modern pneumatic press. Fermentation occurs in stainless steel under temperature control. The whites are usually bottled in June of the year following the harvest. Tijou believes his wines are "vins de garde," wines to be aged, and benefit from cellaring. Total production at the estate is between 60,000 to 75,000 bottles per year.
Anjou wine is produced in the Loire Valley wine region of France near the city of Angers. The wines of region are often grouped together with the wines of nearby Saumur as "Anjou-Saumur". Along with the wines produce further east in Touraine, Anjou-Saumur make what is collectively known as the "Middle Loire" (as opposed to the "Upper Loire" which includes the wine regions of Sancerre and Pouilly-Fume. Within the Anjou wine region are several Appellation d'origine controlee (AOC)s responsible for a broad spectrum of wines including still red, white and rose produced with varying levels of sweetness.
