Hamon makes reference to the ripple which results from dropping a pebble into a still body of water such as a quiet stream or pond. It also means clouds or smoke and is a term describing the cloud-like pattern on samurai swords.
Slightly exotic citrus aromatics round out the nose which compliments its full body with great mouth-feel and finish.
Only 1,800 bottles are produced.
The diatom project seeks vineyards that demonstrate their ability to serve as voices for place. The sites are small (3 acres or less in size) and the goal is to gently craft wines of the utmost simplicity and refinement. In order to achieve this, fermentation is carried out at a very cold temperature in neutral vessels to retain the most primary attributes of the fruit. Furthermore, malo-lactic fermentation is inhibited and the wine ages on its lees with no stirring to maintain the purity of the Chardonnay grape's flavors.
The Santa Rita Hills AVA lies inland along the Santa Ynez River, roughly 10 miles from the Pacific Coast. The river bends south suddenly, marking the end of heavy ocean influence, and the beginning of the region itself. Here the cool climate and variety of silt and clay soils lend themselves to Pinot Noir and Chardonnay fruit of high quality, although many winegrowers are experimenting to great results with other cool-weather varieties.
