A real value in Chablis, as this traditional light-bodied wine really got us excited at the tasting. Crisp clean flavors, characteristic of this northern part of Burgundy are vibrant, making it a natural wine pairing with grilled white meats, grilled or smoked fish or even a really robust summer salad.
Pierre Desvignes has been making wine at his family's Domaine since 1986 when he became the fourth generation in his family to run the business. Past generations of the Desvignes clan ventured off from Chablis to make wine in far off places such as Beaujolais and even the Rhone. Pierre's side of the family has always been, and if you ask Pierre, always will remain in Chablis. The Domaine is large by Chablisien standards in that Pierre owns 60 hectares of vines. He only keeps the best Chardonnay for his own estate Chablis, and everything in the winery is geared towards traditional winemaking.
Roughly 60 kilometers to the north of Burgundy's Cote d'Or lies the region of Chablis, one of France's northernmost wine regions. The soil type is the famed Kimmerigian clay, which lends an instantly identifiable "steely" aroma to the wines. Most of the vineyards are planted to Chardonnay, which is the only grape allowed to use the moniker.
