Third generation wine-maker, Philippe Olivier continues the tradition started in 1944 by his grandfather, Emilien, and later, his father, Pierre. The Cauvy’s have learned the art of making excellent wine from difficult soil by keeping yields low in marsanne, rousanne, grenache blanc and rolle (vermentino) grapes.
Situated in the heart of Faugeres, the Domaine Mas Olivier faces the Mediterranean Sea with its back to the picturesque Cevannes Mountains. Third generation wine-maker, Philippe Olivier continues the tradition started in 1944 by his grandfather, Emilien, and later, his father, Pierre. The vineyard spreads out on 24 hectares of schist terraces, superficially eroded, with colors ranging from blue to rust. This ground variety with its sunny exposition is responsible for rich, age-worthy red wines and crisp, supple whites.
The wine region of Languedoc is quite vast, encompassing much of the Mediterranean coastline of France, as well as reaching quite far inward. To the east, it abuts the southern Rhone and Provence regions, and the wines reflect that in their structured blends. To the west, the region divides further, with Bordeaux-influenced wines to the north, and Catalunian-influences to the south. This diversity (and relative cheapness of land) lends itself to a wine culture that is very playful. Lots of producers from other regions buy property here to experiment. In addition, there is an abundance of good, inexpensive wine that makes it to US shores from Languedoc, most with very "cheeky" names.
