Schioppettino is a wonderfully aromatic dry red wine that comes from the grapes cultivated in the Prepotto area of Friuli, where it is thought to have originated. It owes its name to the "cracklings" from the thick skins of the grapes during fermentation.

Grillo's Schioppettino comes from a 2ha parcel planted on clay/marl soil. The grapes are destemmed and fermented for 18 days under temperature control; after fermentation, the wine is racked into 500L old oak barrels, where it remains for 18 months. Less than 800cs produced.

The Colli Orientali del Friuli is the cooler half of the greater Friuli wine country, some which stretches into neighboring Slovenia. Farther inland, the Colli Orientali was once a rising seabed, and the marl and sandstone deposits here make excellent vineyard sites.
